So silk touch is basically useless

I wouldn't say that....but In a way, yes it kinda is, but grass and mycelium are still good

you can still get red stone ore to use for a door,

What you cant do is mine the redstone block with silk touch, as it might be used as a protection block later on.

And whats the reason to dont get the actual outcome from a broken block?
