what happens when a new update comes out, does the server get updated so we keep all of our stuff?

yes
and the world wont get updated so we keep all our stuff , when the server world bordor is updated that will be new generated world but untill that
we keep all our houses , creations , stuff

Exactly. Your data about your character is inside a players folder inside the current world. When the server gets updated to the latest release of Minecraft, it does not touch the player files, so you have nothing to worry about.

It may take a couple of days to update for the plugins though, so dont update right away :P
