Only the Admins and Optical can set it up I believe. But since i'm not either of those, I'm not 100% sure what the procedure is to set up a grief trap. Most likely a sequence of commands applied to a selected area.

This somewhat fills me with a little fear now.  I somewhat know how the anti-grief system works, but in the same note if it automatically bans you for damaging a protected (assuming PS) area then there are going to be a lot of accidental bans.  I, myself, just the other day planned a waterfall on a cliff side.  I asked a mod over to check the area and he gave me the go ahead.  I started digging  out a channel and ran into a PS area.  Partly due to blaming lag, and partly due to going so fast, I ended up breaking well over 4 blocks of dirt (I hear that's the anti-grief limit) before I realized they were returning due to a well hidden PS.  I gotta be honest, I would have been pissed if I would have gotten banned, especially since I had a mod check the area first.  

I've also had people in my own house "grief" because (before trusted) I asked them to place water but due to overlapping PS fields it took a few tries before I actually got the protections shut down.  I would hate to see them banned for doing me a favor, or me (now that I'm trusted) for doing the same for someone else.

I truly hope the anti-grief system works on a "trap" basis, like I thought it did, and doesn't just randomly select an area and bans anyone who "appears" to be griefing.

No, grief traps are not set with protection stones placed by players. As I said before, they are set by Admins and Optical and are only placed on buildings made by Moderators and Operators. There is no need to be afraid of accidently getting banned, because like I said, only certain buildings have the antigrief feature.
