well this one's probably pretty common but its awesome if you want a nice medieval-ish look to minecraft. The texture pack is called Dokucraft. It comes in 3 packs: light dark and high. I personally love the color scheme of light but it doesnt matter :P.

I like the Painterly pack. You get to customize it how you want. I love it. Its the only one I use.
