Peaceful spawn rate?

are the spawn rates on the peacefuls very low because i have to wander very far from any buildings to find anything like chickens, pigs and cows.

It is on the normal spawn rate.

so by having a light source they should spawn then similar to in single player?

Yep that is correct.

I never find ANY of them, I have had the game for two or so weeks now and I haven't seen a pig yet
